I am in love with all the different ways that one can use vegetables in our diet. In case you don't know me well, I like nothing more than experimenting with different foods and ways of eating them. Sometimes it's cause I'm bored (yawn) or other times, it's because I have a friend or family member that has special food requirements. God forbid (and I mean it) that someone has to feel restricted or hungry when they are eating at my home! The Italian in me wants to make sure that EVERYBODY is satisfied and fed well.
I came across this on Pinterest originally and thought I'd try it since I love experimenting with chia seeds and lemon is one of my favourite flavours. My intent was to create something for breakfast. When I ate it this morning, I decided although it was delicious it might not provide enough protein and healthy carbs to keep me going all morning. Instead, I think it would make a delicious dessert, particularly for someone who cannot tolerate dairy. This recipe is dairy-free and uses coconut milk and some almond milk and very little sweetener.
Here's a pasta dish that is delicious any time of the year. I have experimented with including scallops, cod or other white fish in the dish along with the shrimp. And, if you don't eat fish, you could even substitute some kind of legumes like lentils or chick peas.
