Hawaiian Lime Chicken Thighs

Ingredients:
•  2 lbs. skinless chicken thighs
•  2 T. dried coriander
•  4 T. chili powder
•  4 garlic cloves, crushed
•  2 T. ground oregano
•  2 lemons juiced
•  3 limes juiced


1.  Place chicken thighs in bowl and cover with cold water and juice from 2 lemons.  Set in fridge for at least 2 hours.  I did mine for 24 hours.

2.  Preheat oven to 350 degrees.

3.  In a bowl, mix together chili powder, oregano, coriander and crushed garlic.

4.  Rinse chicken off - add to bowl with spices. Add lime juice and mix well.

5.  Place mixture in a baking pan and place in warm oven. Baste after 30 minutes and cook for 1 hour or until thighs measure 180 internal temperature.
