Morning Glory Muffins

Adapted from the Morning Glory Café
Ingredients:
  • 2 cups unbleached all-purpose flour
  • ​1 cup sugar (organic if possible)
  • 1 tablespoon cinnamon
  • ​2 teaspoons baking soda
  • 1/2 teaspoon salt
  • ​4 ounces of drained, crushed pineapple
  • 1 large apple, peeled and grated
  • 1/2 cup raisins or cranberries
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts
  • 2 large eggs
  • ​3/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract​
Turn oven on to 375F degrees. Grease your muffin pan (makes about 8-10 muffins).

Place the dry ingredients (flour, sugar, cinnamon, baking soda and salt) in a large bowl and mix well. Beat the eggs in a separate bowl and add the pineapple, vanilla, apple, and raisins. Add this mixture to the dry ingredients, along with the coconut and walnut. Stir just until combined.

​Spoon the batter into the muffin pan, filling them almost to the brim. Bake for 20-30 minutes or until they are browned on top and a toothpick inserted comes out clean.
