Orange Blender Muffins

Ingredients:
  • 2 oranges, well washed and cut up including rind (organic would be best)
  • 1 cup of orange juice
  • 1 cup melted butter
  • 2 eggs
  • 3 cups of flour
  • 1-1/2 cups white sugar (organic if possible)
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1tsp. salt
  • 1 cup raisins or dried cranberries
  • 1/2 tsp. vanilla * optional

Preheat oven to 400 degrees. Grease your muffin tins - this should make 12 large ones.

Place in a blender the following: 2 cut up oranges, orange juice, cooled melted butter, 2 egg. Blend well - so that oranges are pureed.

In another large bowl, put in the remaining dry ingredients. Pour half of the wet ingredients into the bowl, mix and add dried fruit followed by remaining wet. Don't overmix.

Scoop into muffin tins and bake for 15 - 18 minutes or until slightly browned and a toothpick comes out clean. Enjoy!
