Serves 4-6 people. Ingredients: • 2 tablespoons olive oil • 1 large onion, chopped • 1 very large sweet potato, chopped into small cubes • 3 medium sized carrots, chopped into small cubes • 2 cloves garlic, minced • 1 - 1/2 tsp. dried sage (depends on how much you like sage) • squirt of Worcestershire sauce • 6 - 8 cups chicken or turkey broth • 4 cups chopped broccoli florets • 1/2 tsp. salt • 1/2 tsp. ground pepper • 1 bay leaf Optional: 1/2 lb. ground turkey, cooked
Melt olive oil in a large saucepan over medium heat. Add onion and garlic; cook until tender about 8 minutes. Stir in chopped sweet potatoes, carrots, salt, pepper, Worcestershire sauce, dried sage and bay leaf; sauté for a couple of minutes.
Add chicken or turkey stock, cover letting it simmer for about 15 minutes or until potatoes and carrots are cooked.
Stir in broccoli and cover. Simmer for another 6-8 minutes or until broccoli is tender and still green. Season with salt and pepper. Serve and enjoy!
