This is a recipe compliments of Fresh in Your Fridge, that I have changed and adapted. It is quick and simple to make and really quite delicious! Serves 4.
Ingredients:
In a saucepan, bring quinoa, broth or water, half of the salt to boil over high heat. Reduce heat, cover and simmer for 15 minutes or until quinoa is tender and no liquid remains. Remove from heat and stir in parsley. Meanwhile sprinkle salmon with pepper and salt. In large non-stick frying pan, heat oil over medium heat and add salmon, stirring until golden - about 5 minutes. Remove salmon and set aside. In same skillet, cook leeks, garlic and red peppers until softened and then add spinach, lemon zest, lemon juice, honey and mustard. Cook until spinach is wilted and then toss in feta cheese and salmon. Serve either hot or cold. This is very delicious! *I soaked the quinoa for 6 hours with 1 tablespoon apple cider vinegar before draining it and rinsing it well. Often times you may not have time, so just soak it for as long as you can - even just 1 hour will help. |
