Set oven to 325 degrees. Grease muffin tins and set aside.
In a large bowl, add dry ingredients and mix well.
In another bowl, beat eggs well before adding oil, applesauce, pineapple and vanilla. Stir half mixture into dry ingredients before adding the zucchini. Add remaining liquids, mixing just until well combined. If the dough is too dry add in milk.
Spoon into muffin tins and bake for 20-25 minutes until lightly browned and toothpick comes out clean. Makes about 16 large muffins.
