4 slices bacon, fried and chopped or 2 T. olive oil*
1/2 cup crumbled feta cheese
1 tsp. chopped parsley
sprinkle of pepper
3 T. flour
1 tsp. baking powder
8 ounces of grated cheese
Turn on oven to 350 degrees. Lightly grease a pyrex pie plate or small casserole dish.
In a frying plan, add raw chopped bacon and sautee until bacon is crisp. Place on paper towel to drain. Use the bacon fat for sauteeing the onion and zucchini. Cook the vegetables until starting to turn translucent - a couple of minutes. Turn off when soft and set aside.
*If not using bacon, than use 1-2 tablespoons of olive oil to sautee instead.
Mix in a separate bowl eggs, salt, pepper, flour, baking powder, parsley, and feta cheese. On the bottom of your greased pan, place the cooked vegetables and bacon. Pour over the egg mixture and top with the grated cheese.
Place in hot oven and cook for 40-50 minutes. Quiche will be firm to a touch and a knife will come out clean.
