Serves 4- 6 people. * adapted from Gramma's Apple Bread Pudding Ingredients: • 4 cups soft bread crumbs (I had some yummy walnut-apricot bread leftover but it could be any kind of bread) • 1/4 cup raisins • 2 cups peeled and sliced apples • 2/3 cup brown sugar + 2 T. brown sugar • 1-3/4 cup almond milk • 1/4 cup butter + T. butter • 1 tsp. vanilla extract • 2 tsp. cinnamon • 2 eggs beaten
Preheat oven to 350 degrees. Grease a 7x11 inch baking dish
In a large bowl, combine bread cubes, raisins, apples, and cinnamon. In a small saucepan on stove, heat almond milk and butter together.
In another bowl, whisk together eggs and vanilla. Slowly, temper the mixture by adding a thin drizzle of the hot milk mixture into the eggs (this way the eggs will not curdle when mixed with the hot milk). Once the milk is all added to eggs, pour over bread mixture.
Place mixture in greased baking dish and bake for 40-50 minutes, or until center is set and apples are tender. What I did was after 40 minutes, I sprinkled about 2 T. of brown sugar and 2 T. of butter on top of the mixture and broiled it for about 3-4 minutes to get a wee bit of a caramel finish on top.
