Ingredients: • 8 cups of rolled oats • 1 cup raw sunflower seeds • 1 cup unsweetened medium flake coconut • 1 cup chopped raw almonds, cashews or walnuts (or could be a combo) • 1 cup sesame seeds • 1 cup ground flax seeds • 1/2 tsp. salt • 3/4 cup oil (I use olive because that is what I have but you could also use coconut oil) • 1/4 cup butter • 3/4 cup of honey • 1/4 cup brown sugar • 1-1/2 T. cinnamon (I love cinnamon) • 1 T. vanilla • 2 cups raisins or cranberries or whatever dried fruit you like
Preheat oven to 325 degrees.
Combine all dry ingredients except the flax seeds in bowl.
Heat butter, oil, honey and sugar together.
Add to dry ingredients. Lay out on cookie sheets - not too deep otherwise it won't crisp up nicely. Place in a 325 degree oven for 30+ minutes - until it is browned but not too dark.
Place in a large mixing bowl so that you can add the dried fruit, cinnamon, vanilla and flax seeds. As an option for extra chunky granola - I drizzled a wee bit more honey over the mixture, put it back on baking trays and put it back in the oven. I immediately turned the oven off, but left the granola on trays to sit for about 20 minutes. It was a bit more time consuming but produced chunkier granola :). Enjoy!
