Turn oven on to 375F degrees. Grease your muffin pan (makes about 8-10 muffins).
Place the dry ingredients (flour, sugar, cinnamon, baking soda and salt) in a large bowl and mix well. Beat the eggs in a separate bowl and add the pineapple, vanilla, apple, and raisins. Add this mixture to the dry ingredients, along with the coconut and walnut. Stir just until combined.
Spoon the batter into the muffin pan, filling them almost to the brim. Bake for 20-30 minutes or until they are browned on top and a toothpick inserted comes out clean.
