1 cup raw walnuts, chopped (could also be almonds)
1 cup raw sesame seeds
1 cup raw sunflower seeds
1 T. cocoa
2 cups rolled oats (optional)
1/2 cup coconut oil
1/2 cup maple syrup
pinch of sea salt
1 T. ground coffee (optional)
1 T. vanilla
1/2 cup ground flax seeds
1 cup raisins, dried cranberries or any other dried fruit of your choice
Mix together first ingredients in a large bowl. If you are gluten intolerant or sensitive, you can easily omit the oats and this abundant nut mixture will be wonderful and nutritious all by itself!
On the stovetop, melt together the coconut oil and maple syrup, along with the coffee grounds, and a pinch of salt. Once melted, take off the heat and add the vanilla.
Add the melted mixture to the dry ingredients. Mix well and place on two cookie sheets - with or without parchment paper. I find the granola is crunchier without the paper but it means of course, you have to wash the cookie sheets afterwards. No big deal :)
Place in a preheated 325 degree oven. I set the timer for every 10 minutes (3x) and rotated the trays from bottom to top to ensure even cooking. Once it is browned to your liking remove and let cool.
Empty the cookie sheets back into your original mixing bowl and add the remaining 1/2 cup of ground flaxseeds and 1 cup of raisins. Mix together and place in a container. This freezes well so I generally place half of it in a freezer bag and the other half goes in a container in the fridge. Enjoy!
