*from Grains of Wisdom, The Callanish Cookbook Ingredients: • 4 cups spelt flour • 1 T. honey or blackstrap molasses • 2 tsp. baking powder • 1-1/2 tsp. baking soda • 1 tsp.salt • 3 T. butter • 1-3/4 cup yogurt • 1 egg and 3 T. water, well beaten (for brushing the top)
Preheat oven to 350 degrees.
Combine dry ingredients. Cut in butter with fork, fingers or pastry blender.
Combine yogurt with honey or molasses and add to the dry ingredients, by making a hole in the dry ingredients bowl first. Mix lightly. Turn out onto a lightly floured board and knead about 10 times until smooth. Divide into 2 portions and shape into rounds.
Place rounds on a greased baking sheet or one with parchment paper on it. Score the top with a sharp knife. I brushed mine with some egg and water (beat together) before placing in oven.
Bake in 350 oven for 1 hour or until toothpick comes out clean from the center of the loaf. I brushed them one more time when they came out so that they looked nice and shiny!
